Abstract

An increasingly complex and dynamic operating environment demands that restaurant operators leverage the wealth of data available to them to drive decisions that support sustained profitability. The goal of this article is to integrate academic research with developments in the field to provide restaurant operators with a comprehensive decision-making framework for restaurant revenue management (RRM). The framework promotes the systematic application of internally and externally generated data to support RRM-related decisions. This framework reflects a broad vision of RRM that is concerned with driving long-Term demand and sustained profitability in addition to supporting short-Term revenue generation.
