Abstract

Pulsed ultraviolet (UV) light technology has emerged as a significant non-chemical and non-ionizing approach to decontaminate food products. Pulsed UV-light is a novel UV-light technology that offers effective inactivation of pathogens on food surfaces within a significantly short period of time. The system consists of light pulses delivered by a xenon gas lamp where the pulses are created by compressing electrical energy into short pulses and using them to energize an inert gas lamp. The energized lamp emits intense light pulses in the continual broadband spectrum from deep UV to infrared with durations spreading over a few hundred microseconds. The technology can be an alternative to the irradiation process, as the wavelengths used in it are significantly longer than those used in gamma irradiation. Another significant advantage of the UV-light technology is that it can operate without the involvement of chemicals or chemical residues.
