Strains in eggshell during cooling of eggs - Measurement and prediction using the finite element method

Abstract

An axisymmetric finite element model (AFEM) was developed by adapting the commercial finite element code ABAQUS to predict strains in whole eggs under rapid cooling conditions. The interaction between the egg content and eggshell was evaluated by measuring the eggshell strains for filled and then emptied whole eggs during cooling. The difference in measured strain values between filled and emptied eggs ranged from -18 to 17% over a range of temperature from -1 to 26°C. Validation of the AFEM was performed by comparing the AFEM calculated and experimentally measured strains in the eggshell during cooling. In the meridional and circumferential directions, the average errors were 18% (-17 to 52% range) and 26% (4 to 54% range), respectively, using the isotropic material property assumption; whereas, the average errors were 30% (1 to 57% range) and 10% (-15 to 41% range), respectively, using the orthotropic material property assumption.
